The recipe you all asked for from my insta stories I finally wrote down! This is one of my absolute favorite healthy recipes EVER! It is now on my weekly schedule for sure! Best part is, all these ingredients save really well so cook everything up and make lots of leftovers.

 

I made it for the first time in this video if you want to see more details:

 

 

RECIPE (No need to measure any of this, add as much as you want)!

 

First, grill your onions and peppers. I used green and red peppers and a yellow onion.

Set aside

 

Spiraled Zucchini: I used one medium zucchini and one yellow squash. I loved the mix and use about one per person!

1. I use this Spiralizer (do not peel or take off the skin)

2. Heat some Avocado Oil, garlic, and half a lemon

3. toss the zucchini mix until warm

Make sure you don't overcook, you want them to be firm and not soggy, only takes a couple minutes!

 

Top with organic:

Tomato

Black Beans

Pinto Beans

Corn

Cilantro

Lime

Avocado

Cheese

and Magic Sauce!

 

Magic Sauce AKA Cilantro-Lime-Ranch sauce:

Reminds me of the yummy dressing they use at Cafe Rio!

1 pkg ranch mix

1 cup Mayo

1 Cup Buttermilk

2 Tomatillos

1 Jalepeno (although I never add this)

1/2 bunch of cilantro

1 garlic clove (or about a teaspoon of the squeeze stuff)

1 Lime

 

Put in a blender and makes about 3 cups!
